Chef Luis Silva’s culinary journey is rooted in his Mexican heritage and a lifelong connection to food, family, and surf culture. Growing up in a family involved in restaurants along the Baja California border, Luis developed an early passion for cooking while spending much of his time surfing throughout Tijuana, Rosarito, Ensenada, and North Baja. After moving to Oahu’s North Shore in 1991, he continued developing his culinary skills through work in a variety of kitchens. His experience later took him to Lisbon and Switzerland, where he expanded his knowledge of international cuisine. Returning to Hawaii, Luis launched his own catering business in 2004 and catered the Triple Crown of Surfing for five consecutive years. He later opened Luibueno’s in Haleiwa and furthered his education by graduating from the Culinary Institute of Tijuana in 2017.

Inspired to bring the flavors and culture of North Baja Mexico back to Hawaii, Chef Luis combined his culinary experience, Mexican roots, and passion for surfing to create what he calls “Fresh Mexican Surf Culture.” In September 2020, he brought that vision to life by opening Jorge’s, a restaurant centered around great food, hospitality, camaraderie, and aloha. For Chef Luis, Jorge’s is more than a restaurant—it reflects his belief in building a strong team, treating guests like family, and creating a place where Mexican culinary tradition and Hawaii’s surf culture come together.
